Our workshops are a perfect way to learn how to make some the most famous Apulian dairy products - Primosale and Ricotta - and the wood oven cooked Focaccia, Bread and Friselle.

Primosale and Ricotta cheese workshop

Food workshop - Making ricotta cheese

Learn how to make Primosale and Ricotta in just few hours. With just a few simple ingredients, this step by step workshop will show you how easy it is to make these two delicious dairy products.

You will gain knowledge of the products used, the right milk to use, the rennet, the proper way to make Primosale.

After making the Primosale you will start making Ricotta. Ricotta, meaning "recooked" in Italian, is made from the whey leftover from making the Primosale. With few more ingredients added the heat separates the curds from the whey. When the curds are drained, the result is creamy and still warm ricotta that you can taste on some bread.

Primosale and Ricotta workshops can be organised any day of the week and are open to singles, couples, groups and families.

Focaccia, bread and friselle workshop

Food workshop - Making focaccia, bread and friselle

During this workshop you can learn the all process of making delicious local Focaccia - both with onions and cherry tomatoes - Bread and Friselle from beginning to end.

You will learn the difference between the different kinds of local flours available and their use in the local cuisine. You will also master the process of firing the right wood oven, the kind of wood to use and, finally, bake all that you will have prepared.

Focaccia, Bread and Friselle workshops can be organised any day of the week and are open to singles, couples, groups and families.
